“We feel very comfortable in the King of Prussia Market. We have the best team we’ve ever had in Pennsylvania, from management to busboys. We’re not a large company, and each restaurant is important to our future,” Andy Himmel, CEO of Paladar Restaurant Group, told What Now Philadelphia. “So, if we choose to open anything new, we are certainly interested in a market we’ve been happy in, and in a community we can support and know we’ll be supported in. Newtown just seemed like a really good fit for us.”

In addition to Bomba Taco + Bar, Paladar Restaurant Group also owns the taco chain’s sister restaurant, Paladar Latin Kitchen & Rum Bar. Bomba Taco + Bar’s Newton location will seat about 65 indoors and another 40 around their bar. Their covered three-seasons patio has a bar and dining area that seats 70 and will be warmed by outdoor heaters in the fall.

Bomba Taco + Bar serves elevated global-inspired taco pairings from their El Gringo taco with ground beef, chihuahua cheese, pico de Gallo, lime crema, and hot sauce, to their Vietnamese Meatball taco with pork meatball, Asian slaw, soy jalapenos, peanut-plantain crumbs, and chile aioli. Salsas come in Spicy Peanut, Verde, Fresca, Caribbean Mango, and Fire-Roasted Tomato. The guacamole has a build-your-own option. Bomba Taco + Bar’s menu also includes starters, like their Brazilian Cheesy Bread and Harissa Cauliflower “Wings.”

If you’re trying to ditch carbs, you can try one of their bowls like the Wild Ahi Tuna Poke Bowl with chile-lime cucumbers, avocado, sesame seeds, soy jalapenos, cilantro yogurt sauce, and malanga chips over white rice or cauliflower rice. Sides include dishes like smoked Brussel sprouts with garlic confit and plantains with lime crema and scallions. Lunch or dinner can be finished with a Campfire Cookie Skillet or Bomba Churros. Bomba Taco + Bar has lots of vegan, vegetarian, and gluten-free options and a kid’s menus so that everyone can enjoy. You can also bring Bomba Taco + Bar home or to the office with their family taco night boxes and catering options.

In addition to tacos, Bomba Taco + Bar offers a lively atmosphere perfect for happy hour and beyond. Their fresh flavored margaritas are sold by the glass or carafe, and their sangrias come in Brazilian red and tropical mango white. Tiki cocktails include a Rum Punch, Jungle Bird, and more. The bar also has a nice list of tequilas, whiskeys, rums, wine, and beer.

“I think our cocktails are some of the best, and I think we can stand up to anyone when it comes to tacos,” Himmel said. “We hope to be a local hangout. We sell tacos and drinks, but we hope people will come in some nights after dinner at Harvest down the way from us and have a drink with us or sometimes head down the other way. There aren’t a ton of happy hour options around either. We hope to be a place where you can hang out at the end of the day and where people can go and spend time together.”
