New Jersey foodies, prepare to welcome the future of an enduringly popular chain. Mother and son entrepreneurs Lisa Dalton and Anthony Degrande are bringing Perkins Griddle & Go, the next evolution of the beloved concept, to the region next year, reports local media outlet Asbury Park Press.

Degrande and Dalton have signed on to open 10 storefronts of the new, more streamlined concept across the Garden State, with the first planned for Monmouth County. Though the duo have not selected a precise location for their inaugural Perkins Griddle & Go yet, they are still hoping to open it by October of 2025.

While Perkins Griddle & Go keeps the quality fans have come to know and love, it emphasizes speed and efficiency for the present, fast-paced society. The footprint is markedly smaller than the traditional Perkins storefronts, which measure in at around 6,000 square feet. Perkins Griddle & Go restaurants span between 1,500 and 2,000 square feet, with space for up to 65 customers.

Guests can look forward to other advancements to the concept, including digital menus and self-ordering kiosks. Degrande describes it, saying “It’s the Perkins that everyone knows and loves. They’ve transformed it and they designed it for fast-paced consumers. They’ve taken that hospitality, the traditions of Perkins, and they’ve really made it modern.”
