Chef Michael Schulson, who formed the restaurant group Schulson Collective, will be opening a new restaurant named Samuel’s Deli this summer. It will be located at 1523 Sansom Street, atop the alluring classic Italian meets the sophisticated style of Rome restaurant, Giuseppe & Sons, on the first floor.
The press release for the restaurant reveals exactly how close to the heart this new restaurant is to Schulson and describes Samuel’s Deli as “an ode to his grandfather Samuel and the traditional Jewish deli. Schulson’s “Poppy” Samuel owned a kosher butcher, and his “Nanna” would take home the spare cuts and make hearty soups, juicy roasts, schnitzel, noodle pudding, and more. His family’s food story has not only inspired his newest restaurant but Schulson’s career as a chef and restaurateur.”
Schulson’s vision for the menu will be assisted by baker Nick Brannon and pastry chef Abby Dahan. Brannon was formerly head baker at Parc Restaurant and has perfected the Samuel’s Deli bagel after months of testing. His other specialties for the new menu are the house ryes and pumpernickel, his gravlax and whitefish salads, his corned beef, and smoked pastrami along with other dishes that have yet to be revealed.
Abby Dahan is also an alumnus of Parc Restaurant as a pastry chef and is the owner and instructor of The Bake School which she opened after leaving Parc during the pandemic. Dahan grew up in Paris and attended one of the City Of Light’s finest pastry schools, Gregoire Ferrandi. She says via the press release that she “is excited to add her original recipes for rugelach, giant hamentashen, Black & White cookies, babka, and other treats to complete the full Jewish deli experience.”
