A brand new restaurant concept will be blossoming in East Kensington in spring of 2024. The unnamed eatery, helmed by Defined Hospitality, will be taking over the space previously dedicated to Weisbrod & Hess Brewing Co., reports The Philadelphia Business Journal.

The restaurant, located at 2421 Martha Street, will be yet another collaboration between Defined Hospitality and chef Joe Beddia. The partners previously worked together in 2019 to launch Pizzeria Beddia.

Construction is currently underway to update the historic location to meet the needs of a modern restaurant.

When renovations are complete, the building will span over 11,000 feet, and include a ground-floor main dining room, a second-story private dining area, and a mezzanine. The plans also call for a skylight above the main dining space.

Defined Hospitality is remaining mum about details concerning the restaurant.  However, co-owner Greg Root assures future customers that the new location will not be another pizza place. Speaking of the venerated building, Root states “It’s big, it’s grand, and we’re restoring the beauty of the building architecturally.”

Defined Hospitality is taking care to maintain the integrity of the 141 year-old building. The structure is included in the Philadelphia Register of Historic Places, and the restaurant group is treating it with the care that designation warrants. Defined Hospitality is working closely with Stokes Architecture & Design and Katherine Lundberg of local design firm Briquette Studio to renovate the space to meet its needs, while preserving the existing structure.

Defined Hospitality has a vested interest in the Kensington area. The restaurant group also helms R&D, Suraya, Kalaya, and Pizzeria Beddia in the neighborhood. This new venture sees Defined Hospitality recommitting to the area. Restoring the building is a pains-taking task, so no official opening date has been announced, but Defined Hospitality is aiming for a spring opening.
