Post Haste’s beverage menu exclusively features spirits, beers, wines, citrus, herbs, produce and mixers from the Eastern United States. Nothing is imported to both support local purveyors (like Landisville Produce, Green Meadow Farm, Horseshoe Ranch, Lancaster Farm Fresh, and more) and address the bar’s environmental impact by reducing food miles while experimenting with unexplored combinations and new ingredients. Post Haste’s food menu similarly emphasizes local sourcing in seasonal, modern American small plates with European influences.
Throughout all aspects of Post Haste, there is an intentional and forward-thinking story to tell. While “posthaste” is defined as “with great speed,” Post Haste reinterprets the phrase to mean the opposite: “after the haste,” underscoring their intention of creating a destination to relax and unwind after the haste of the day. Guerrero and Beebe share a penchant for locality and sustainability, having met while founding and running a college cafe that sourced over 90% of its products locally.
Post Haste’s forward-thinking farm-to-glass cocktail program is helmed by Beverage Director, Fred Beebe, who hails from outposts like Momofuku Ssam Bar, Sunday in Brooklyn, and Blue Hill at Stone Barns. Inspired by the bounty that surrounds Philadelphia, Post Haste’s cocktail menu has four categories:
- Covers: for those with a taste for the classics made with local ingredients:
- All The Cosmos (a Cosmopolitan using local produce) – Pine Barrens cranberry, kumquat superjuice, lemongrass syrup, with Penn 1681 Vodka and Faccia Brutto Aperitivo
- Remixes: for those looking to expand their taste with signature spins built on a familiar base:
- Pearnicillin (a recreated ode to the Penicillin) – Smoked pear juice, Liberty Pole Peated Bourbon, Forefathers Single Malt Whiskey, local ginger, and honey syrup, and yuzu superjuice
- Experimental Pop: for adventurous drinkers interested in inventive creations
- Sippin’ The Tea (inspired by a Thai iced tea) – Charleston black tea, condensed oat milk with Appalachian allspice, cardamom leaves, pandan and turmeric, Stateside Vodka, and Lockhouse Amaro
- Free Spirit: for those looking for a sip in the zero-proof zone
- Orange Youse a Carrot (an ode to Gritty) – Ritual Non-Alcoholic Rum, carrot-pandan cordial, kumquat superjuice, and lemon thyme foam
Beyond ingredients sourced east of the Mississippi — Post Haste’s back bar will have a hydroponic herb garden for a visual representation of their sustainably-minded approach and, of course, garnishes. There will be 14 spirited cocktails and four zero-proof “free-spirit” cocktails on the opening menu, ranging in price from $14 to $16 for full-proof and $10-$12 for zero-proof.
Culinary offerings are led by Chef de Cuisine, Elise Black, whose background spans JBFA-nominated outposts from Ellen Yin, Nick Elmi, and Marc Vetri. Elise’s menu is seasonal, modern American small plates that celebrate the bounty of the Mid-Atlantic with European influences and Philly flair. The menu includes bar snacks, hearty entrees with vegetarian and vegan options, including:
- Philly Beignets – roast pork, garlic roasted broccoli, fondue
- Radish Rillettes – confit radish, garlic crisp, toast (vegan)
- Post Ham Sammy – house ham jus, Nana’s coleslaw, pickled cabbage, Jasper Hill Whitney
- Vignole and Heirloom Polenta – with asparagus, snap peas, English peas, caramelized green garlic (vegan)
Post Haste’s 1,800-square-foot space offers 70 seats and 16 bar seats and was designed by Aeternum Design Studio. In keeping with the sustainable approach, 95% of furniture and design details were repurposed or recycled from the existing restaurant space or purchased second-hand. Post Haste features a rotating art gallery, with the first installation from RAIR, the Philadelphia-based “Recycled Artist In Residency” nonprofit uniquely situated within a construction and demolition recycling center in Northeast Philadelphia.
