Sophie’s, who recently partnered with Four Birds Distilling Company, had relocated to Havertown from Ardmore prior to the conflagration. The fire broke out on April 22, six weeks after the barbecue joint opened at its new location.

Sophie’s owner Gregory Herman spoke to What Now Philadelphia about re-launching the restaurant. The restaurateur is optimistic, saying “We have a great crew, and we’re going to come back bigger and better.”

Herman and his team are taking advantage of the rebuild to better customize the space to Sophie’s needs. Though Herman wasn’t explicit on the details, he did mention he’s likely to include additional seating, adding “We can build back in a way that better suits us.”

Once Sophie’s re-opens, customers can look forward to enjoying Four Birds’ unique, hand-crafted cocktails alongside barbecue platters and sandwiches. The kitchen also serves sweet potato hush puppies and butterscotch swirl cornbread.

Sophie’s will be open from 4 pm to 10 pm, Tuesdays through Wednesdays, and from 11:30 am to 10 pm, Thursdays through Sundays.
