The enterprising Trapani family is once again joining forces with chef Brad Shive to bring Easton dining with a view.The team will be opening the Thyme Rooftop Grille at the Commodore building this fall, reports local media outlet 69 News.

Thyme will occupy 8,500 square feet on the roof of the seven-story building located at 100 Northampton Street.
The Trapanis and Shive have previously collaborated on Grille 3501 and Zest Bar + Grille.
The restaurant will provide indoor and outdoor dining. Guests who choose to remain inside won’t need to sacrifice their view of the city, however. Visitors who opt for indoor seating will be able to observe the Lehigh and Delaware Rivers and the Easton-Phillipsburg bridges. Balcony diners can enjoy views of College Hill and downtown Easton.
While guests may be attracted by the view, Shive’s innovative menu is Thyme’s true draw. The chef intends to repurpose and recreate some of his beloved dishes for the new restaurant. A Thyme press release states “From the appetizers and seasonal salads to the entrées and desserts, Thyme will offer new twists on, as well as a few favorites from, the award-winning Grille 3501 and Zest Bar + Grille menus.”
Thyme will offer an impressive menu of seasonal cocktails and local craft beers. Wine aficionados will enjoy the restaurant’s varietal wine list.
Thyme will be open for dinner between 4 and 10 pm on Tuesdays through Fridays. The restaurant will offer brunch service on the weekends, between 10 am and 2 pm. It will then open again for dinner from 4 to 10 pm. Thyme will be closed on Mondays.
